Bitter gourd has been an Ayurvedic staple for centuries. Dehydrated karela rings make it easy to keep on hand all year.

Bitter gourd, or karela, is one of those vegetables people either love or avoid. In Ayurveda it is valued for its role in balancing blood sugar and cleansing the system. In Madhya Pradesh, where our karela is grown, it is a lunchtime staple, fried crisp, stuffed with masala, or simmered in a thin gravy.

The problem with fresh karela is short shelf life and heavy prep. Ringed and sun-dried karela solves both. A ten-minute soak brings it back to life, ready for a stir-fry, a soup, or even a bitter-brew tea.

The bitterness is a feature, not a bug. That is where the medicine lives.
