How to rehydrate and cook
For salads, raitas or cold preparations, soak the pieces in warm drinking water for 5 to 10 minutes and drain. For soups, curries, dals and slow-cooked dishes, add the flakes directly to the pot, the moisture in the dish rehydrates them as it cooks. One tablespoon of dehydrated vegetables is roughly equivalent to a quarter cup of fresh.
